Only 20-year-old vines or older contribute to this wine, which is fermented using only native yeasts in open wooden casks. After an extended period on lees, it spends at least six months in oak, allowing it to develop its classic Côte-de-Beaune character. Vallet Frères, founded in 1864 by Pierre Bourée, is now in the capable hands of the fourth generation of the family. They have their own vineyards in the Gevrey-Chambertin, including a prized parcel in the Grand Cru of Charmes-Chambertin. Beyond their estate holdings, they're also a respected négociant, crafting excellent wines from top appellations in the Côte dOr. Their approach is a blend of tradition and finesse, producing wines that are elegant and expressive of their terroir. Its this dedication to quality that makes Vallet Frères a quiet yet significant player in Burgundys wine scene.
